We have always been fans of Sarotti Chocolates, having tried 3 different versions previously. This time round, we tried Sarotti’s Exquisite Truffles with Java, Sao Tome and Ecuador cocoa fillings. The 3 kinds of truffles had outer casings consisting of 53% plain chocolate, with the Sao Tome being dusted in sugar. The casings were on the hard side, which made us feel that we should have left the chocolates under the heat for a while, to attain a slightly more melted chocolate coating. The inner fillings were softer and more fluid-like. The Java and Ecuador fillings were towards the bitter side, while the Sao Tome carried a mild fruity flavour. Strangely but to out delight, the fillings gave off mild alcohol vapour as we savoured them.
