Rum and Raisins Souffle

Rum and Raisins Soufflé

Our first soufflé from Laurent! The Rum and Raisins Soufflé was rather light and fluffy in texture, but with a very strong rum taste, even the raisins were filled with rum. Upon the addition of the vanilla sauce, the soufflé  had a curd-like tofu texture, very smooth and silky. But as we had added too much vanilla sauce, the soufflé became rather sweet. Overall, it was a very light dessert and easy on the palate.
